CHICKPEA AND CHOCOLATE CAKE

  INGREDIENTS

  • 200 g canned chickpeas

  • 20 g bitter cacao powder

  • 2 eggs

  • 80 g sugar

  • 30 ml vegetable oil (neutral tasting)

  • vanilla essence

  • 50 g dark chocolate, flaked

  • rind of 1 orange, grated


METHOD

Drain the chickpeas and cook gently in a little oil for a couple of minutes. Then blend and add the sugar, cacao powder, vanilla essence, grated orange rind, vegetable oil and the eggs and mix well; add a pinch of salt and the dark chocolate flakes.

Pout the cake micture into a greased cake tin and bake in a pre-heated oven at 180°C for 25/30 minutes.
