PIQUANT CHOPPED SALAD WITH MIXED LEGUMES

A nice antipasto, or side dish; good to accompany a barbecue or picnic.

  INGREDIENTS

  • 400 g mixed canned legumes (chickpeas, cannellini beans, borlotti beans), drained

  • 250 g radicchio, cut up (coarsely chopped)

  • 2 thick slices of any type of salami, diced

  • 80 g white onion, thinly sliced

  • 3 small pickled gherkins, finely chopped

  • several spoonfuls, as desired: chopped parsley

  • about 40-50 ml red wine vinegar

  • about 60 ml extra virgin olive oil

  • salt and pepper to taste


METHOD

Mix the beans with the radicchio and salami, then top with the sliced onion.

Make the dressing: mix (or blend, your choice) the oil, vinegar, gherkins, salt, pepper and chopped parsley.

Mix with the radicchio and beans mixture, and serve.
