TUSCAN BEANS, COOKED COUNTRY STYLE

  INGREDIENTS

  • 500 g canned cannellini beans

  • 4 sage leaves

  • 2 cloves garlic, whole and unpeeled

  • water, as needed

  • 2 tablespoons of extra virgin olive oil

  • a pinch of salt


METHOD

Put the beans, along with the sage, the unpeeled garlic, a pinch of salt and the oil in the pot. Add enough water to cover the beans about double their depth in the pot, place a loose-fitting lid on the pot, and bring the beans to the boil.

Reduce them to a simmer, and cook about half an hour; season with salt to taste.

They can be eaten simply as a side dish, ladled over toasted bread and drizzled with olive oil, or added to other dishes.
