PIQUANT CHOPPED SALAD WITH MIXED LEGUMES
A nice antipasto, or side dish; good to accompany a barbecue or picnic.

INGREDIENTS

400 g mixed canned legumes (chickpeas, cannellini beans, borlotti beans), drained

250 g radicchio, cut up (coarsely chopped)

2 thick slices of any type of salami, diced

80 g white onion, thinly sliced

3 small pickled gherkins, finely chopped

several spoonfuls, as desired: chopped parsley

about 40-50 ml red wine vinegar

about 60 ml extra virgin olive oil
