ACF is very excited to be partnering for the second year with The Italian Association of Canned Vegetables Industries to bring Australian Professional & Amateur Chefs a Canned Legume competition as part of the “Legumes from Europe Campaign” . The Competition, co-funded by the European Union, is open to Professional and Amateur Chefs, Cooks, Apprentices & Culinary Students.

5pm AEDT Saturday 10th December 2022 Registrations Close
Monday 12th December 2022 links sent out to upload video, recipe & photo
Sample Boxes will be sent to remaining entrants week of the 16th January 2023
5pm AEDT Friday 3rd February 2023 Entries Close

9am AEDT Wednesday 8th February 2023 Voting opens for 2 week period
11.59pm AEDT Friday 24th February 2023 Voting Closes
Wednesday 1st March 2023 Winners Announced
What You Need to Do
Prepare, cook & present a recipe using one or more of the following Canned Legumes from Europe, on a video no longer than 2 minutes, your dish must contain at least 40% of one or more of the following products.

Cannellini beans

Red kidney beans (also organic)

Lentils

Green peas
Send your video, recipe & photograph of you presenting your dish to Office@austculinary.com.au
Video can be made by mobile phone or DSLR camera.
All complying videos will be posted on the ACF Website.
Then you have the opportunity to watch, like and promote it with your colleagues and friends.
1st PRIZE
STUDY VISIT / DISCOVERY TOUR OF ITALY
The winner will be the chef with the greatest number of likes on YouTube for the submitted Video.
2nd PRIZE
ADVERT INCLUDING THE RECIPE IN A SPECIALIST FOOD ONLINE MAGAZINE / BLOG
The winner will be the chef that has promoted and shared the contest with the greatest number of Views on YouTube.

HERE’S SOME TOP TIPS TO MAKE YOUR VIDEO LOOK MORE PROFESSIONAL
Background
-
Nothing looks less professional than a messy or distracting background!
-
If you’re doing your video from your home kitchen, make sure it’s uncluttered and clean – same if you’re doing it from work.

If you’re doing your video at a desktop device in the home, please make sure there’s nothing too distracting in the background.
Lighting
-
One thing to avoid is hard overhead lighting as it can cast unflattering shadows.

Little or no shadow will create a more open vibe
Audio
-
Audio makes all the difference so make it a priority.
-
Fuzzy, muted, or muffled audio is a big no-no.
-
Be aware of any background noise that you might be picking up – traffic, birds, even the wind will be very distracting.
Avoid Shaky Footage

It’s hard to hold a camera completely steady, so try not to hold your camera at all if you can help it.

Instead, set your camera on a sturdy surface or use a tripod.
Use Your Phone the Right Way

Record in landscape mode (that is, horizontally instead of vertically).

Use the camera on the back of your phone. The front camera’s quality is not as good on most phones.
Work on Your Camera Presence

Smile, especially at the beginning of your video. It makes a huge difference in how you come across.

Slow down slightly when you talk and make an effort to speak clearly.

If you feel jittery, try using props to keep your hands occupied.

Any professional chef or amateur chef, cook, apprentice, culinary student can take part

Entrants must be an Australian Resident

Entrants must be over 18 years old

Send the video, recipe – ingredients and method using template above. The recipe will be assessed by the ACF Culinary Comittee to be deemed eligible

The dish can be starter or main course, or can be a soup or wrap
-
Canned Legumes from Europe must be the main product used in the dish – 40 % of the recipe
